Artichokes with warm anchovy dip and panini grissini

For this recipe, choose young, tender artichokes. The leaves must be soft to the touch – no prickly thorns, a sure sign of a hairy choke.

For the artichokes

4 globe artichokes

1 lemon, sliced

2–3 garlic cloves, crushed

a few sprigs thyme

a few sprigs oregano

1 teaspoon salt

a few peppercorns

1⁄2 cup olive oil

1⁄2 cup dry white wine

water to cover

For the dip

1⁄2 cup olive oil

6 garlic cloves, crushed

1 × 50g jar anchovies, drained and chopped

1⁄2 cup thick cream

a grinding of black pepper
