Refrigerated cooked potatoes can be found in the dairy or produce section of your store. If you can’t find them, use frozen cooked shredded potatoes that have been defrosted.

Sloppy Joe Pitas

Serves 3

Plan to eat this one with a knife and fork. Here you get all the great flavors of a Sloppy Joe with almost no cleanup. You could also make this in rolled-up tortillas for a Southwest twist. Serve with a dollop of yogurt or sour cream for a creamy addition.

¼ red bell pepper, chopped

¼ large onion, chopped

½ tablespoon olive oil

½ pound lean ground beef

2 tablespoons tomato sauce

1 tablespoon Worcestershire sauce

4 tablespoons bottled chili sauce, with extra for topping

3 whole wheat pitas

Preheat the oven to 400ºF.

Cut three 20" pieces of parchment.

Line a baking sheet with aluminum foil.

Place the pepper, onion, and oil in a glass measuring cup or bowl and microwave on High for 3 minutes.

Mix vegetables with beef and add tomato sauce, Worcestershire, and chili sauce.

Cut 1⁄8 to ¼ off the end of each pita and gently open the pita along the exposed side.

Stuff 1⁄3 of the meat mixture into each pita.

Spray each side of the pitas with cooking spray and place each one on a separate piece of parchment.

Fold the parchment.

Bake for 20 minutes. Serve with additional chili sauce.
