17. Violet Marshmallow

Grandpa Joe tells Charlie that Willy makes marshmallows that taste like violets. Here is an interesting recipe to try.

Serving size: 4

Cooking time: 30 minutes

Ingredients:

Oil to spray

3 gelatin sheets

2 cups sugar

2/3 cups corn syrup

¼ cup water

¼ teaspoon salt

3 drops violet essence

1/3 cup sugar

1/3 cup corn starch

½ cup cold water

Purple color drops

Instructions:

1. Powder 1/3 cup sugar and set aside.

2. Apply oil over a baking tray and line with paper.

3. Add corn starch and powdered sugar to a bowl and mix till well combined.

4. Add cold water and gelatin to a bowl and let it sit for 15 minutes.

5. Add 2 cups sugar to a pan along with corn syrup and water and boil.

6. Make sure the temperature reaches 250 Fahrenheit and not more.

7. Pour it over the gelatin along with ¼ teaspoon salt and mix till well combined.

8. Add the violet essence and color and mix.

9. Pour it over the parchment paper and sprinkle the sugar and corn starch mixture.

10. Let it set for a few hours before slicing and serving.
