Yummy Combo Dinner

Serves: 5

Cooking Time: 18 minutes

Preparation Time: 15 minutes

Ingredients:

1 tbsp. olive oil

1 small yellow onion, chopped finely

2 garlic cloves, minced

Salt and freshly ground black pepper, to taste

1 lb. ground turkey

8 oz. fresh spinach

2 tbsp. dried oregano

1 tbsp. dried parsley

8 oz. feta cheese, crumbled

¼ C. Kalamata olives, sliced

¼ C. green olives, sliced

Instructions:

1) Preheat the broiler of oven.

2) In a cast iron skillet, heat the oil over medium-high heat and sauté the onion, garlic, salt and black pepper for about 2-3 minutes.

3) Add the ground turkey and cook for about 4-6 minutes or until browned completely, stirring frequently.

4) Add the spinach and dried herbs and stir to combine.

5) Reduce the heat to medium and cook for about 2-3 minutes.

6) Remove from the heat and stir in half of the feta cheese.

7) Place the olives on top of the turkey mixture, followed by the remaining feta cheese.

8) Broil for about 2-3 minutes.

9) Remove from the oven and serve hot.
