This is the ultimate turkey sandwich, topped with a fried egg and complemented by a smoky chipotle sauce. You can make it cold (with a warm fried egg), but I like it best as a sandwich melt, which is how I designed this recipe.

FOR THE CHIPOTLE MAYONNAISE

2 tablespoons mayonnaise

1 tablespoon sour cream

1 teaspoon freshly squeezed lime juice

¼ teaspoon chipotle powder

FOR THE SANDWICH

1 tablespoon butter

2 slices sourdough bread (optional)

2 tablespoons chipotle mayonnaise

2 (4-ounce) slices smoked turkey

2 (2-ounce) slices Gruyère cheese

3 tablespoons vegetable oil, divided

1 medium egg

½ cup spinach

TO MAKE THE CHIPOTLE MAYONNAISE

1.Place the mayonnaise, sour cream, lime juice, and chipotle powder in a small bowl and mix until well combined.

TO MAKE THE SANDWICH

2.Butter one side of each slice of bread. Place the bread, buttered-side down, in a large skillet over medium-low heat. Spread the unbuttered side of the bread slices with the chipotle mayonnaise. Top the bread with the turkey and cheese. Cover the pan and cook for 5 minutes, or until the cheese begins to melt. During this time, you can cook your egg.

3.Heat 2 tablespoons of the vegetable oil in a small skillet over medium-low heat for about 1 minute. Break the egg into a saucer and carefully slip the egg into the oil. Reduce the heat to low and cook until the white is partially set. Gently slide a spatula under the egg and carefully flip the egg. Cook for about 2 more minutes. Lift the cover from the pan with the bread slices and use a spatula to slide the egg onto one slice of the bread.

4.Return the egg pan to the burner over low heat, then add the spinach and the remaining 1 tablespoon of vegetable oil. Stir for about 3 minutes, until the spinach is wilted and soft. Add the spinach on top of the egg.

5.Gently slide a spatula under the slice of bread without the egg and turn it over onto the egg side. Cover the pan and cook for 1 minute. Transfer the sandwich to a plate and enjoy!

PRO TIP: For the best experience, your egg should be a little over medium with a runny yolk and firm whites. I recommend cooking it for about three minutes per side.
