Lemon Garlic Scallops

Time Needed to Prepare: 10 minutes

Ingredients List:

12 large sea scallops

2 tablespoons of olive oil

2 tablespoons of unsalted butter or ghee

3 cloves garlic, minced

Juice and zest of 1 lemon

2 tablespoons of fresh parsley, chopped

Salt and pepper, to taste

Instructions:

Pat the scallops dry with a paper towel and season with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.

Sear the scallops for 2-3 minutes on each side until golden brown. Remove and set aside.

Reduce heat to medium, add butter and minced garlic to the skillet, and sauté until fragrant, about 1 minute.

Add lemon juice and zest, stirring to combine.

Return scallops to the skillet, spoon the sauce over them, and cook for an additional 1-2 minutes.

Garnish with fresh parsley and serve immediately.
