Note : To toast the caraway seeds, spread them in a single layer in a small frying pan and toast over medium heat for 45 to 60 seconds. Shake the pan to promote even toasting. When the seeds darken a shade and are aromatic, slide them onto a plate to cool.

One 4-pound chicken

¼ cup soy sauce

¼ cup pineapple juice

¼ cup pineapple vinegar (Pok Pok Som brand)

1 tablespoon minced peeled fresh ginger

1 teaspoon dark sesame oil

3 cloves garlic, minced

2 cups chopped scallions

1 fresh Fresno chile, seeded and chopped

Kosher salt and freshly ground black pepper

1 cup (2 sticks) unsalted butter, at room temperature

1 bunch fresh cilantro, chopped
