This is a recipe that’s been gracing our table since 1985. And it’s from my dad.

Every summer my mom’s side of the family has vacationed at the Jersey shore. Like, we are talking nearly 35 years. It is one week when my mom and aunt barely cook a thing—most of our dinners are taken care of by “the dads” and are often giant seafood feasts. The girls may prepare a salad, but other than that, everything is off-limits.

I wish you could sit down with my dad right now so he could tell you the story about these scallops. It’s insanely entertaining.

If you listen to how he tells it? It goes a little something like this: Back in the late ’80s, while on vacation, my mom decided that she just wasn’t cooking. And can you blame her? Three kids under the age of five—break needed. So that left the men to quickly prepare dinner and, well, they kind of screwed themselves. It was so delicious that it’s happened ever since. Now we all just expect it. Now on vacation, THEY want the break.

We don’t let them get it.

My dad doesn’t measure a thing these days when he preps this recipe, and it’s essentially perfected by tasting. It’s been 30 years in the making and while it rarely tastes different, it always tastes incredible. Every time we’ve served it to new guests, whether it be significant others or new friends, they beg for the recipe. I actually didn’t think he would give it to me since it’s a little bit of a secret . . . but he did it for you.
