This flavor is named for Portland but gives a nod to Iran—ice cream was more or less invented in the Middle East, after all. In particular, we celebrate the flavors of bastani, often referred to as “Persian ice cream.” We add just enough rose water for a strolling-through-a-garden experience, rather than a drinking-from-grandma’s-perfume quality. We stir in pistachios and tint the ice cream pink with beets. After we churn the ice cream, we layer it in containers with saffron-infused cream, a bastardized version of an old Persian trick of folding in frozen clotted cream that here provides a high-fat delivery system for a wallop of flower flavor.

WHAT WE LEARN: I’ve made beet-flavored sorbet (see Aquabeet Sorbet, this page), but more often, I use beets not for their flavor but for their stunning red color. You should, too! Store extra beet syrup in an ice cube tray until frozen, then transfer the cubes to self-seal bags and freeze them for up to 4 months. Thaw a few whenever you want to turn cakes, cocktails, or buttercream pink.
