Tahdig (Crispy-Bottomed Persian Rice) I love a recipe whose main ingredient is suspense. Tahdig, the iconic Persian rice dish, is named for the crispy layer at the bottom of the pot. Inverting the pot to reveal the tahdig never gets old! The secret is yogurt; I learned it from my Persian-Israeli friend Rottem Lieberson, who suspects that the extra fat and protein in the yogurt help stabilize the rice, brown it evenly, and prevent it from burning. Though there are many versions of tahdig with fruits, nuts, and potatoes, I find the additions increase your chances for failure. And since I’m all about crispy-rice victory, I offer the plain version here. Make sure not to skip the step of catching extra steam with a kitchen towel during cooking, which helps make the rice dreamily fluffy.
