I am always looking for ways to introduce maple syrup into a recipe. Maple syrup goes hand in hand with apples, so it was not hard to find a place for maple syrup in this recipe. Look for small baking apples that hold their shape when baked, like Pink Lady, Macoun, Newton Pippin, or Suncrisp, to name just a few. —Julie

BAKING TIME: 45 TO 50 MINUTES / SERVES 6

2 tablespoons unsalted butter, at room temperature, for pan

PASTRY

2 cups (10 ounces) all-purpose flour

2 teaspoons baking powder

1 teaspoon fine sea salt

½ cup (4 ounces) cold unsalted butter

½ cup plus 2 tablespoons cold whole milk, as needed
