Wood Choppings
And they had the wood choppings in the spring. All the men came and brought their axes. Some of them might have brought a crosscut saw. At that time, they didnât know what a chain saw was. And, of course, the women did the cooking just like they did for the corn shucking. But the men would get out there and cut enough wood to last all year curing tobacco and fireplace wood and stovewood.
But we had good times. And each woman knew what she could cook best. Miss Ollie would cook a rice pudding, and I declare she could make the best âuns I ever ate. She was real good on rice puddings. And, maybe, one could bake better bread, and somebody else could make better pies, something like apple pies, or those old big pan pies, you know. Fruit pies. Law! That was good eating!
But that chicken and dumplings and those pinto beans were my favorite! âCourse, they had mashed potatoes. Everything that grew on the farm.
You could just put that big old hunk of meat in those pinto beans and set them back on the stove and let âem cook a long time. Ellis and Clyde would sit over here on the bench behind this table and eat pinto beans and laugh.
Iâll never forget it. Clyde always loved the big old hunk of meat that was boiled in the pintos, you know. And I remember one day he said he had eat more pinto beans than he wanted a many a time just to get that fat meat they were cooked with. But he said he hated to just reach back and get more meat when he didnât get more beans. Sometimes it would be meat on the bone, and sometimes it would be just regular old middlinâ meatâpork. A ham bone gave it better flavor.
