Eggs in Purgatory

You’ve probably seen some version of this at the kind of airy, mimosa-serving brunch places your #influencer acquaintances eat at. This bright, tangy tomato sauce freezes very well; double the batch and freeze a little extra (minus the eggs) for an ultra-easy supper on the nights you can’t be bothered to do more.

SERVES 2 TO 4

5 tablespoons olive oil, plus more for drizzling

4 garlic cloves, thinly sliced

1 medium yellow onion, thinly sliced

Kosher salt and freshly ground black pepper

1 teaspoon red pepper flakes

1½ pounds multicolored cherry tomatoes

6 large eggs

6 thick slices country bread

1 small bunch basil, leaves picked, for garnish
