A BROWNIE’S FAVORITE TREAT

Before you go to bed at night, combine 2 cups of McCann’s steel-cut Irish oats (available at all health food stores and most supermarkets) with 2 cups of water, 1½ teaspoons sea salt, and ¼ cup powdered whey or buttermilk. Cover with plastic wrap and allow to sit overnight. In the morning, combine oat mixture with 2 more cups of water in a heavy saucepan. Bring to a boil and simmer, stirring, until thick, about 5 minutes. This is the easiest, most healthful, most delicious breakfast imaginable, but it must be tried to be believed! Serve it with an array of “toppings” and let the children create their own oatmeal sundaes: chopped walnuts, brown sugar, maple sugar, cinnamon, raisins, dried cherries, and milk. Serves four, with a bit left over for the brownie. (Alternatively, you can put all the ingredients and the full amount of water into a Crock-Pot before bed and turn it on low, and your porridge will be hot and ready to eat in the morning.)
