FIG. 8-5: The NASA Skylab pioneered the sort of food that’s eaten in space today: freeze-dried, foil packed, or put up in pull-top cans. The food was heated in a modular tray such as this. (NASA photo)

There will come a day, however, sometime in the first quarter of the twenty-first century, when the first meal is cooked using food grown in space.

Pioneering experiments in astroagriculture were made in the 1980s by Carl N. Hodges and his colleagues at the Environmental Research Laboratory of the University of Arizona. Plants were grown without soil on the inner surfaces of rotating drums. This simulated the environment of a rotating space station.

A 1983 study by the Boeing Company for NASA showed that growing 97 percent of the necessary food in an earth-orbiting facility occupied by as few as twelve people over a fifteen-year period could save at least $68 million in 1983 dollars.
