Vegetables as Appetizers
An easy way to get more vegetables into the day is to serve them as an appetizer before lunch or dinner. This takes advantage of your children’s natural hunger. After all, a lot of children don’t deliberately avoid fruits and vegetables. They just end up inadvertently overlooking them. Here’s what usually happens: You serve a meal with pasta and broccoli, and your kids gravitate toward the pasta because it is their preferred food. Then, because your kids are no longer terribly hungry, they pick at the other, healthier foods on their plate. But serve your children vegetables when there’s nothing else to eat . . . and presto!
