Menu Development

Given the time frame involved, you have to keep the menu simple. Lucien and I would typically spend 10 minutes scratching out a menu based on:

• A current theme, e.g., Italian food we had experienced in Chicago the month before.

• What is available in the local market. We worked across the street from a Costco, so our protein usually came from there. Seasonal produce was always a major factor.

• Dishes with minimal prep time. Our menu would more than likely be made up of items that could be made “à la minute” one of Lucien’s favorite expressions, meaning “at the last minute”).
