Rich chocolate biscuit buttercream

The ideal recipe for chocolate lovers. Take your guests to cookies and cream heaven with this irresistible combination of cookie crunch and creaminess in the form of buttercream. Top it off with a mini cookie on top of cupcakes, or a sprinkle of cookie crumbs on the top of a cake!

Ingredients: • 200g butter, softened

• 2 cups icing sugar

• ¼ cup cocoa powder

• 10 chocolate thin

Instructions:

1. Soften the butter in the microwave on low for approximately 30 seconds until soft, but not melted.

2. Transfer the butter to an electric mixer bowl with a whisk mixing attachment. 3. Cream the butter on a high speed in the electric mixer for

1 minute until completely smooth. Add in the cocoa powder then mix again for 20 seconds until incorporated.

4. Place the chocolate biscuits into a food processor and process until the biscuits resemble fine breadcrumbs. Add the biscuit crumbs to the mixer with the other ingredients. Turn the electric mixer onto a low speed and mix the crumbs into the butter mixture for about 30 seconds or until incorporated well.

5. Finally, add in the icing sugar in ½ a cup at a time, mixing between each batch, until you have mixed in all of the icing sugar.

6. You should create a chocolate brown, slightly crunchy biscuit buttercream!
