Cleaning Wild Mushrooms

Cleaning wild mushrooms properly is extra important because they grow in dirt, and they can sometimes have tiny hidden hitchhikers—you know, bugs. Cleaning them dry is best, because once wet, they are nearly impossible to fully dry, and moist mushrooms tend to go slimy in the refrigerator before you even have a chance to cook them. Depending on the size and texture of your foraged mushrooms, take a clean, dry pastry brush or toothbrush to brush away any bits of dirt or other debris.

If you are not into getting extra protein, be sure to inspect your mushrooms for bugs. If the mushrooms are gilled, such as oyster mushrooms, check between the gills. As an added measure, place your foraged mushrooms on a cloth and let sit for 10 to 15 minutes; chances are the bugs’ alarm bells have sounded and there will be an exodus. I highly recommend that you do this before leaving the area in which you’re foraging so that any insects stay there.
