2Put the meat in a saucepan and cover well with water. Bring to a boil, cover and simmer on a low heat for approx. 40 minutes. Remove any foam.

3Peel the pumpkin and sweet potato and cut into bite-sized cubes. Cut the cabbage into strips, wash and leave to drain in a colander. Slice the chorizo.

4Add the pumpkin, sweet potato, cabbage and chorizo to the saucepan and simmer the stew for a further 30 minutes. Now add the sweetcorn and beans, and stir in the cream.

5For the paprika sauce: peel the onion and chop finely. Wash, dry and dice the bell pepper. Sauté the onion and pepper in the lard, while stirring, for 5 minutes. Mix the herbs in the stock and add to the onion and pepper. Serve the stew with a dash of the sauce.
