Make the pasta: Pour the flour onto a work board or countertop. Make a well in the middle and add the eggs and olive oil. Whisk the eggs with a fork and slowly start incorporating the flour from the sides of the well until you have a wet ball. Now you can ditch the fork and start using your hands. Knead the dough for 10 minutes, until smooth. If it sticks to your hands, add a little more flour. The process takes a while, so be patient. You can also process the dough in a food processor or stand mixer with a dough hook. Just add the flour, eggs, and olive oil and process or mix on medium speed for about 5 minutes, until the dough comes together in a firm ball. But I prefer using my hands.
Cover the dough with a cloth and set aside for at least 30 minutes and up to 1 hour until the it looks shiny and plump.
Cut the dough into 4 equal portions and cover them with a tea towel.
To make the pasta, you can use an electric pasta maker, a hand-crank pasta machine, or even a rolling pin. Roll out 1 dough ball into an oval shape with a rolling pin until it is flat enough to feed through the pasta machine at the thickest level. If using a pasta roller, feed the pasta sheet through the lowest (thickest) level (level 1 on my KitchenAid; machines may vary), fold it in half, then feed it through again on the same level until you have a very long oval shape. Sprinkle lightly with flour or fine semolina on each pass so that the pasta doesnât stick to the machine. Turn up the level on the machine by one and feed the pasta through again several times, folding as needed. Repeat through each consecutive level of the pasta machine until the pasta is very, very thin (level 6 on the KitchenAid is the thinnest I suggest going) and set aside, flat, on a floured surface. Repeat to process the remaining dough balls through the machine, rolling the sheets to approximately the same size. (If the sheets are mismatched or you want shorter noodles, feel free to cut each sheet in half crosswise.)
If youâre using a rolling pin, simply roll the dough portions out into very thin sheets. It can be difficult to get the pasta sheets uniformly thin with hand rolling, but donât worry; this pasta will still be extremely delicious.
Stretch a single dough sheet on the work surface and arrange fresh herbs and flowers on top. You can dab a bit of water so that the petals stick to the surface of the dough.
Carefully lay a matching-in-size second sheet of dough over the decorated sheet. You can spray or sprinkle a touch of water on each pasta sheet so that the sheets stick better to each other. Using a rolling pin, carefully roll over the 2 sheets, pressing the herbs and flowers into the dough.
