The Ideal Brunch Spread

1. OJ + bubbly: Fresh squeezed with corner-store sparkling wine.

2. Grapefruits (halved) with grapefruit spoons: The most underrated utensil.

3. Bagels: Figure a dozen for every ten people or so. (Somebody, carbs be damned, inevitably downs two.) As for the mix, best to double down on “everything” and “plain”— they’re always the two most popular. Poppy, sesame, of course. Salt? Sure, one, maybe two, tops. “But, please, don’t even consider cinnamon raisin,” says Evan. “They’re not bagels.”

4. Capers: The small nonpareils are best.

5. Lemon wedges: For a quick spritz.

6. Other accoutrements: Red onion, sliced tomatoes, sliced cucumber, sliced radish.

7. Soft-boiled eggs: Just because. Sprinkled with flaky sea salt and cracked black pepper.

8. Greens: Such as arugula mixed with sprouts and fresh herbs, because you’re a hippie at heart.

9. Smoked Fish Salad: Mmm . . . (page 180).

10. Olives: On the side, like a garnish. Not those canned sliced black olives—whole plump Greek olives only!

11. Avocado: Fork mashed with a dash of olive oil. Makes a good dairy-free alternative to cream cheese, too.

12. Purple grapes: Ice-cold!

13. The Goldie: (Page 113.)

14. Shmear: Philadelphia is the tried-and-true store-bought brand, and our love for it is true. All of Wise Sons’ shmears start with a Philadelphia base. The organic stuff, making our own—nothing came close. Also, a shmear must shmear both halves of the bagel, please.

15. Smoked salmon: With fresh dill.

16. Pickles: It’s not a Jewish meal without them!

17. Coffee: It matters.
