1 ½ cups (6 ounces) shredded extra-sharp Cheddar

Freshly ground black pepper to taste

1. Bring a medium saucepan of lightly salted water to a boil over high heat. Add the broccoli and cook until tender, about 5 minutes. Drain and rinse under cold water.

2. Heat the milk and broth until steaming in a small saucepan over low heat or in a microwave.

3. Meanwhile, melt the butter in a heavy medium saucepan over medium heat. Add the onion and celery and cook until the onion is translucent, about 3 minutes. Add the sherry and cook until it has evaporated, about 30 seconds. Stir in the flour. Whisk in the hot milk and bring to a simmer. Reduce the heat to low and simmer uncovered, whisking occasionally, until smooth and thickened and no raw flour taste remains, about 10 minutes.
