6 leeks, trimmed, halved lengthwise, and rinsed

Heat the oven to 425°F (220°C). Arrange the leeks, cut side up, on a baking sheet. Drizzle over the oil, season with salt and pepper, and roast until they’re tender and have fanned out, and the edges are slightly brown and quite crisp, about 30 minutes.

GREEN SALAD WITH WALNUTS AND PAPRIKA DRESSING

MAKES: ABOUT 1/3 CUP (75 ML) DRESSING

Salad greens will refresh the palate while paprika adds excitement. Before you cook the Papyrus Leeks, put a couple of handfuls of walnuts on a baking sheet and toast them for about 5 minutes, then chop them up and set them aside. Have mixed greens washed and wrapped in a tea towel in a plastic bag in the fridge. When the time comes for salad, put a good handful of greens per person in a bowl, add the walnuts, and toss with just enough dressing to coat them lightly. A little chopped fresh dill in here wouldn’t hurt, and you can always substitute hazelnuts and hazelnut oil for walnut.
