Make the cheese whiz at least 1 day ahead and store it in an airtight container in the refrigerator for up to 1 week. These pretzel balls are best served warm immediately but will keep, uncovered, at room temperature for up to 18 hours. The pretzel balls can be reheated in the oven at 300°F (150°C) for 5 minutes.

This recipe originated with a trip to a friendâs cottage in high school. Josieâs best friend, Neil, had invited her to the family cottage and Neilâs mom, Barb, prepared an appetizer based on Pillsbury Crescent Rolls, topped with cream cheese mixed with salad dressing and whatever fresh veggies were in the fridge. It didnât seem like much at first, but Josie couldnât stop eating it. Then she couldnât stop making it. Eventually this version emerged with homemade puff pastry, our own buttermilk ranch cream cheese, a rainbow of vegetables, and an elegant garnish. The result is an accessible dish, popular at parties, and a great weekday family meal.
Puff Pastry Dough

Buttermilk Ranch Cream Cheese
8 ounces (225 g/1 cup) cream cheese, room temperature
¼ cup buttermilk
1 tablespoon Ranch Spice Mix (this page)
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
Toppings
2 tablespoons finely chopped red onion
½ cup chopped English cucumber
1 red bell pepper, chopped
¾ cup small broccoli florets
¾ cup cauliflower florets
1 carrot, peeled and grated
¼ cup fresh dill leaves
Edible flowers (optional)
