Callie’s Potato Casserole

This was my Mamaw Callie’s recipe. She would always fix these potatoes for Easter, but it’s just as good any time of the year. She went to be with the Lord years ago and this is the only recipe of hers that I have written in her own handwriting. I photocopied the recipe onto pretty paper, framed it and hung it in my kitchen.

10-3/4 oz. can cream of mushroom soup

1 c. milk

4 to 6 redskin potatoes, peeled, cubed and boiled

1/2 c. green pepper, chopped

1/2 c. onion, chopped

salt and pepper to taste

1 c. shredded Cheddar cheese

Combine soup and milk in a bowl; stir well. Layer potatoes, pepper and onion in a 13"x9" baking pan sprayed with non-stick spray. Pour soup mixture on top. Sprinkle with salt and pepper to taste; add cheese on top. Cover with aluminum foil; bake at 300 degrees for 25 to 30 minutes. Serves 4 to 6.
