Cut the chicken into 8 pieces (2 thighs, 2 drumsticks, and halve the breasts to create the other 4 pieces). Season with salt and freshly ground black pepper.

Heat olive oil in a pan. Brown the chicken pieces until golden over medium heat. Pour the wine in the pan, increase the flame, and bring to a sim-mer. Add rosemary, sage, unpeeled garlic cloves, and peperoncino. Reduce flame to low, cover the pan, and let simmer for 20–30 minutes, until the chicken is cooked and falling away from the bone. Remove the seeds of the tomatoes, cut in large pieces, and let them cook with the chicken briefly. Serve.
