This is a wonderful, authentic, turkey gravy that you can make and freeze in August if you like, thanks to the year-round availability of turkey legs and thighs. Making this gravy is a two-day process, but only because of the refrigeration time. The recipe is truly easy and foolproof and doesn’t require more than an hour at most of concentrated attention.

You can find directions for making gravy from the pan juices after the turkey is roasted in any standard cookbook, but I warn you that it is a traumatic experience if you’ve never done it before: everyone is hungry and will gather in the kitchen while you try to separate the fat and juices, gauge the amount of flour, and whisk and stir without spattering liquid on your clothes—and the results are really inferior to this gravy.
