The original mill at De Leon Springs was slated for destruction in 1961, but Peter Schwarze stepped in to restore it for the one-of-a-kind Old Spanish Sugar Mill Restaurant. The mill is now electrically powered to grind flour, and the eatery is famous for the grills at each table. For generations, people have lined up to get a turn at making their own pancakes, eggs, and sausage. It’s as close to home cooking as you can get away from home. Besides the usual unbleached white flour, there is a stone-ground mixture of five different flours, and with all the pancake additions that can be ordered—blueberries, bananas, peanut butter, pecans, chocolate chips, apples, and applesauce—people get very creative. Laughter frequently erupts from the tables. The restaurant is busy and loud, especially on weekends. The service is fast, and the meal a bit messy and wonderful. And you don’t have dishes to clean up!
