Mandarin Orange Chicken

(Dinner in 15 minutes)

I invented this dish for my son who has had an insane love affair with mandarin oranges since he was very young. I don’t understand it but what the heck, there are worse addictions. Not that he has noticed, but this is a pretty dish too. In his words, “If it tastes good, it’s all good.”

INGREDIENTS

1 lb chicken-breast tenders or chicken breasts cut in 1-inch pieces (Rinse chicken first—remember clean work surface and clean hands.)

¾ tsp each, salt and pepper

1 tbsp butter

1 tbsp olive oil

½ cup orange marmalade

1 tbsp cornstarch

7 oz can mandarin oranges, drained

Optional: sesame seeds and sliced green onion (grocery store salad bar) for garnish

DIRECTIONS

Sprinkle chicken with salt and pepper.

Heat butter and oil in a large nonstick skillet over medium-high heat.

Add chicken to the skillet and cook 4 minutes or until lightly browned.

Combine orange marmalade and cornstarch in a small bowl.

Gently stir in oranges.

Add marmalade mixture to the skillet; cover and simmer 6 minutes or until the sauce is slightly thick, stirring once.

Sprinkle with sesame seeds and sliced green onions if desired.

Serves 3

Serving suggestion: Stir chopped cashews and raisins into hot, cooked, boil- in-the-bag rice for a speedy side dish.
