Fruity Rice Chicken or Turkey

This recipe is a one-dish meal for children who have sensory issues and do not like “lumps and bumps” in their food.

1 tablespoon (15 ml) olive oil

1 small onion, chopped

3 tablespoons (45 g) applesauce or pearsauce

2 dried apricots

3 tablespoons (42 g) chicken breast or turkey breast

3 plum tomatoes, skinned, seeded, and chopped, or 2 tablespoons (32 g) tomato puree

2 tablespoons (20 g) golden raisins

¾ teaspoon finely chopped fresh rosemary

3 pinches each ground coriander and cinnamon

¾ teaspoon finely chopped garlic (optional)

¾ cup (175 ml) water

¾ cup (175 ml) chicken broth

3 tablespoons (30 g) cooked basmati rice

Heat the oil in a small pan over medium heat. Add the onion and fry until soft, about 2 minutes.

Mix in the fruits, chicken, tomatoes or tomato puree, and raisins.

Add the rosemary, spices, garlic, water, and broth. Bring to a boil, then reduce the heat, cover, and simmer for about 20 minutes, stirring occasionally to prevent sticking.

Add the cooked rice to the pan and stir.

Puree all ingredients in a blender. Add extra water if a thinner consistency is preferred, or more cooked rice if a thicker consistency is better.
