SELECT

Smell them—a ripe tomato should smell like a tomato, especially at the stem end.

STORE

Place tomatoes at room temperature in a single layer, shoulder side up, and out of direct sunlight. To store ripe tomatoes for any extended period, keep them between 55º and 65º.

PREPARE

If you want to seed a tomato, core it, and then cut it in half crosswise. Use your thumbs to push the seeds out of the tomato halves. Seed tomatoes when you don’t want much juice.

COOK

Tomatoes can be stewed or crushed for use in casseroles, chili, and many Italian dishes.
