Whenever grilling chicken for dinner, toss a few extra chicken breasts on the grill. Sliced and refrigerated, they can be served another day in quesadillas, tacos or burritos for an easy meal with fresh-grilled flavor.

Paula’s Twice-Baked Potatoes

Serves 12

6 potatoes

1/4 c. butter, softened

1/2 c. milk

1 onion, finely chopped

6 slices bacon, crisply cooked and crumbled

1 t. salt

1/2 t. pepper

1-1/2 c. shredded Cheddar cheese, divided

Optional; sour cream, chopped fresh chives

Bake potatoes at 375 degrees for one hour, or until tender; cool. Cut each potato in half lengthwise and scoop out insides, leaving a thin shell. Mash potato pulp with butter in a bowl. Add milk, onion, bacon, salt, pepper and one cup cheese and mix well. Spoon mixture into potato shells and place on a lightly greased baking sheet. Bake at 375 degrees for 25 minutes. Top with remaining 1/2 cup cheese; bake an additional 5 minutes, or until cheese melts. Garnish with sour cream and chopped fresh chives, if desired.
