bratwurst and cabbage with dunkel sauce

You can never go wrong with the classic bratwurst and beer and this one-pot meal makes for a simple but delicious dinner. The dunkel sauce is a dark German beer sauce flavored with mustard to pair with the bright and tangy cabbage and sausage and can be made in advance and refrigerated until needed.

bratwurst and cabbage

1 large head red cabbage, shredded

1 bunch small carrots, thinly sliced

½ cup (118 ml) apple cider vinegar

¼ cup (59 ml) water

½ tsp kosher salt

8 pork bratwurst

1 tbsp (14 ml) olive oil

dunkelweizen sauce

2 tbsp (30 g) bacon fat or butter

2 tbsp (15 g) all purpose flour

1 cup (236 ml) Dunkelweizen beer

¾ cup (177 ml) chicken stock

2 tbsp (28 g) whole grain mustard

2 tsp (10 ml) Worcestershire
