Take the beef out of the fridge.
2 HOURS AHEAD:
Preheat the oven to 220°C/425°F/Gas mark 7.
Season the beef generously. Get a large frying pan hot over a high heat and brown the beef all over. Transfer to a roasting pan and roast in the oven for 20 minutes. Remove and wrap tightly in several layers of foil. Rest in a warm place for an hour. (And you’ve got a hot oven ready for your roast potatoes.)
30 MINUTES AHEAD:
Put the red wine gravy over a gentle heat and warm through.
