Truly shouldn’t have just wished for the race car if she found out the flying power of cheesy prawn frittata. Smiley but super tasty, and your beloved omelet isn’t a match to it.

Ingredients

• 6 large eggs, cracked, seasoned, and whisked

• 3 leeks, sliced

• 1 cup garlic and herb cheese cream

• 120g prawn, raw peeled

• 2 tbsp. coconut oil

• 1 tsp salt

• 2 tsp. fresh ground pepper.

Method

In a large saucepan over moderate heat, pour in the oil and fry the leeks for 4 minutes

Add the prawns, toss it for 1 minute

Stir in the eggs and half of the cheese cream. Add some salt and pepper. Cover and allow simmering for 1 minute

Open the pan and pour remaining cheese over it, cook for 5 more minutes

Dish into plates and serve
