You can bake this cake in a standard-size loaf pan. Allow 1 hour baking time.

CREAM CHEESE FROSTING

¼ pound cream cheese, at room temperature

3 tablespoons unsalted butter, at room temperature

1½ cups sifted confectioners’ sugar

1 teaspoon cognac vanilla (see page 29)

Combine the cream cheese and butter in a food processor or with an electric mixer and process until well blended. Add the confectioners’ sugar and cognac vanilla and process until smooth. Chill, covered, in the refrigerator until it has a good spreading consistency, 30 minutes to 1 hour.
