JUNIPER BERRIES AND CORIANDER IN TANDEM ARE THE CLASSIC AROMATICS FOR GIN. They get used in beers, too, but more often on an individual basis (juniper in Scandinavian spiced ales and coriander in Belgian wits). Here, though, the pair adds joyous buoyancy to a strong Belgian ale, a light-bodied brew that packs a punch thanks to the addition of Belgian Candi Sugar. This almost tastes like a beer-gin cocktail, if you can imagine that—perfect for raising a special toast. Goes well with late nights and light foods of summer.

60-MINUTE MASH AT 152°F

2½ quarts water, plus 1 gallon for sparging

2.0 pounds Belgian Pilsner malt

0.4 pound Caramel 10 malt
