the INGREDIENTS

40g (1½oz) vermicelli rice noodles

100g (3½oz) beansprouts

1 spring onion, finely chopped

¼ red onion, finely chopped

100g (3½oz) sugar snap peas, finely sliced on the diagonal

¼ papaya, finely sliced

¼ cucumber, sliced into fine batons

handful of coriander leaves, finely chopped

125g (4½oz) cooked skinless chicken breast, shredded

a few mint leaves

pinch of chiili flakes (optional)

lime wedge (optional)

For the dressing

juice of ½ lime

1 tsp rice vinegar

¼ red chilli, finely chopped

sea salt and freshly ground black pepper
