Roasted Cauliflower
Serves 2 to 4, Vegetarian/Vegan/Gluten-Free
INGREDIENTS
1 head cauliflower, washed, cut into florets, and sliced
1 clove garlic, minced
*Sea salt and black pepper, freshly ground
*1 tablespoon smoked paprika
*1 tablespoon cumin
*1 tablespoon curry powder
*1 tablespoon olive oil
*1 tablespoon Ziggy Marleyâs CocoâMon Curry Coconut Oil, or coconut oil of your choosing
*Adjust to your seasoning preference
PREPARATION
Preheat oven to 375°F.
On a roasting pan, lay out the floret slices and drizzle with olive oil.
Season cauliflower with pepper, salt, paprika, cumin, curry powder, minced garlic, and coconut oil.
Roast in oven for about 40 minutes or until golden brown.
Roasted Cauliflower can be used in the Brown Rice and Salmon Bowl.
