Instructions:
1. Preheat your oven to 350 degrees F.
2. In your pan over medium heat, add the oil and cook the onion and garlic for 5 minutes.
3. Transfer to a blender.
4. Add the tomatoes and tomato juice, roasted pepper, vinegar and tomato paste in the blender.
5. Pulse until smooth.
6. Prepare the lasagna noodles according to the directions in the package.
7. Drain and rinse. Set aside.
8. In the same pan, cook the bell pepper and sausage for 5 minutes.
9. Add the zucchini and cook for 3 more minutes.
10. Mix the egg whites with the cheese and basil.
11. Spread the top of the lasagna noodles with the tomato sauce, cheese mixture and sausage mixture.
12. Roll up the lasagna.
13. Bake in the oven for 30 minutes.
