4 tbsp rice vinegar

1 tbsp sugar

1 tsp light soy sauce

1 tbsp mirin

Cut the leaves off the beetroot and discard. Boil the beetroot for 20–25 minutes, then remove them from the water and set aside until they are cool enough to handle.

While they are cooling, combine all the ingredients for the sweet soy vinegar in a heat-resistant glass bowl and microwave at a medium heat for 30 seconds to warm through (or in a small saucepan for 1 minute).

Peel the beetroot with a potato peeler and trim the top and roots. Cut the beetroot in half and then into thin, half-moon slices.
