For the marinade:
Salt
2 tsp dark soy sauce
½ tbsp rice wine
2 tsp cornstarch
1 tbsp water
For the sauce:
½ tbsp dark soy sauce
1 tbsp light soy sauce
Salt
1 tsp ginger, finely chopped
1 tsp garlic, finely chopped
1 tbsp green onion, finely chopped
2 tsp cornstarch
1 tbsp vinegar
2 tbsp water
2 tsp sugar
Preparation time: 10 mins
Cooking time: 10 mins
Serving Size: 2
Instructions:
1. In a bowl, take dark soy sauce and light soy sauce. Add ginger, garlic, and onion and mix well. Add salt to taste. Add some vinegar, cornstarch, water, and sugar. Stir until all the ingredients are combined well. Set aside.
2. Take chicken pieces and dark soy sauce, rice wine, cornstarch, and water. Mix well. Add salt to taste. Combine all the ingredients thoroughly and set aside.
3. Take a wok and heat it on high flame until it starts smoking. Pour some oil and toss in the chicken. Stir fry the chicken until it starts turning golden brown.
4. Bring the chicken to the edges of the wok and add onions at the center. Put in the fried peanuts, chili peppers, Sichuan peppercorn powder and stir fry for 1 minute. Add salt to taste.
5. Pour the sauce that we made earlier to the wok and keep stirring until it thickens.
6. Mix the chicken with the sauce and add the Chinese chili oil.
7. Stir well and combine all the ingredients.
8. Serve immediately.
