THE McKINNEYS OF KENMORE

Mary Sullivan sat at the long wooden counter peeling potatoes, trying not to talk out loud to herself. Every so often, a phrase would be vocalized causing the dog asleep in the corner to raise his head. “Blasted potatoes,” Mary muttered out loud. A smile came over her face when she remembered that the new kitchen girl would be arriving today. “I’ll soon be free of this,” she said aloud. Mary was so accustomed to having another person in the kitchen that she had not even noticed that she talked out loud to herself until her husband pointed it out to her the other day. “Blast him too,” Mary thought out loud. Moving smoothly from one task to the next, Mary began chopping the mountain of peeled potatoes.

Using her long knife, she slid the pile of chopped potatoes into an immense pan coated with melted butter. To this she added onions, green peppers and smoked ham. She turned the heat down under the pan and got started on the biscuits. As she rolled out the dough she began to wonder about this new kitchen girl. “I hope to hell she knows her way around a kitchen,” Mary said aloud. “I’m in no mood to baby sit,” she added. Suddenly, the dog in the corner barked. “What’s that Jack? ‘Yer tender ears can’t handle a curse word?” Mary laughed as she picked up the biscuit cutter and began cutting perfect circles out of the tender dough and laying them side by side on a long baking sheet. She picked up the baking sheet with both hands and walked over to the oven, opened the door with her foot and slid the sheet inside. She carried a large white crockery bowl filled with fresh eggs back over to the counter and began cracking each egg into a separate bowl. “It’s a good thing I can serve breakfast buffet style this morning,” Mary thought as she poured a bit of cream into the eggs. She seasoned the egg mixture with a bit of salt and pepper before pouring all of it into a frying pan that sputtered with melting butter. “I can’t be expected to cook breakfast and serve it as well,” she complained.

Mary walked out the door that separated the kitchen from the dining room and inspected the buffet area. Plates were neatly stacked alongside flatware and napkins. Chafing dishes were warmed up and serving utensils laid close by. A hot, fruit compote already filled one of the chafing dishes. Coffee, juice and water were lined up in large silver carafes with glasses and cups within easy reach. The long table was laid with a white lace tablecloth and a vase with spring flowers graced the center of the table. Satisfied that everything was in its proper place, Mary returned to the kitchen to check on the progress of breakfast.

The chafing dishes were filled with piping hot food in the nick of time. Mary was renowned for her innate
