Pour 2 cups of water in a saucepan and bring to a rolling boil. Add quinoa, reduce to a gentle simmer and cook covered for around 15-17 minutes or until all the water has been absorbed.

While the quinoa is cooking take a small bowl and combine rice vinegar, maple syrup (or sugar) and salt. Set aside.

Once the quinoa has finished cooking use a fork to fluff it up and transfer it from the saucepan to a large plate. Add the vinegar-soy mixture to the quinoa, 1 tablespoon at a time, slowly mixing so that it is well combined.

Place a nori sheet on a sushi mat and spread ΒΌ of the quinoa mix evenly over the entire sheet, except the last two inches as you will need to dampen this strip in order for it to stick.

Place a little spinach on top and add a few cucumber and avocado slices. Roll up very tightly, and as you come to the end dampen your fingers to wet the end strip, pressing down lightly in order to make it stick. Repeat with the remaining ingredients until you have made a total of 4 rolls.

Use a very sharp knife to cut each roll evenly into 4 sushi pieces.

Serve immediately with wasabi, or store in an airtight container in the fridge for 3 days.
