Butterbeans in Brown Sauce

This will give you a boost on the coldest of days

Serves 4

250g / 1⅓ cups of dried butterbeans

9cm / 3½ inch strip of kombu cut up small

Cook the above in a large pan until tender; keeping the water level just above the beans, do not drain.

1 large onion chopped

1 tablespoon of rapeseed oil

1 tablespoon of barley miso

optional: 1 tablespoon of corn flour

Sauté the onion in the oil until tender. Add to the beans when they are cooked along with the miso. Simmer for a couple of minutes stirring well.

If the sauce is not thick enough put the corn flour in a mug and blend with 2 tablespoons of water; add this to the sauce and simmer 2 minutes more, stirring well.

Serve with hot pot vegetables or bubble and squeak if wished.
