Cream-less Cauliflower Soup
Serves 5-6
Ingredients:
¼ cup olive oil
1 large onion, finely cut
1 medium head cauliflower, chopped
2-3 garlic cloves, minced
3 cups vegetable broth
salt, to taste
fresh ground black pepper, to taste
Directions:
Heat the olive oil in a large pot over medium heat and gently sauté the onion, cauliflower and garlic.
Stir in the vegetable broth and bring the mixture to a boil.
Reduce heat, cover, and simmer for 30 minutes. Remove the soup from heat and blend in a blender or with a hand mixer. Season with salt and pepper and serve.
