6. Gently lower the dumplings into the boiling water; don’t cook more than 4 dumplings at a time to prevent any sticking together. Boiled dumplings cook fast; about 3 to 4 minutes. Dumplings are done when the wrappers look slightly translucent and they float to the top. Gently scoop up dumplings with a skimmer. Transfer to the serving dish and serve with dipping sauce.
7. To pan-fry precooked dumplings, heat a small amount of oil in a skillet over medium heat; cooking spray works well for fast and greaseless fried dumplings. Cook until they are hot inside and the edges are golden. If you’re using gyoza wrappers you can skip the boiling step and pan-fry them directly for slightly longer, about 2½ to 3 minutes per dumpling.
