Remove the pieces of garlic and discard.
Pour the melted butter over the eggplants.
Heat the milk with the nutmeg, and tarragon, and season. Bring to the boiling stage.
Stir in the cream and pour over the eggplants.
Cover the ovenproof dish with greased foil.
Bake in the oven for 20 minutes.
Remove the foil and sprinkle with the cheese.
Bake for another 15 to 20 minutes until the cheese is golden and bubbling.
Serve immediately and enjoy.
