Creamy lime pie
Lime provides a mild yet well-rounded citrus flavour to this tasty pie, which is wonderful as a dessert or just with a cup of tea. Top the pie with fresh strawberries or blueberries and dust with sifted icing sugar for a more festive look.
DOUGH FOR A PIE SERVING 6:
180 g plain flour
3 tablespoons caster sugar
175 g cold butter, in cubes
FOR THE CREAM:
juice of 5 limes (100 ml)
3 medium eggs
180 g caster sugar
200 ml pure (whipping) cream
• To make the dough, measure out the flour and sugar in a food processor. Add the butter and quickly work into a dough. Tip the dough straight into a non-stick 22–24 cm springform tin, and use floured fingers to press the pastry well into the tin. Prick the base with a fork. Put the tin in the freezer while you prepare the rest of the pie.
Cut the limes in half, squeeze the juice and measure out the right amount. Preheat the oven to 175°C/345°F and prebake the cold pie shell for 10–15 minutes, or until very lightly golden.
Meanwhile, whisk together the eggs, sugar and lime juice in a bowl (the mixture may look a bit odd, but it will work itself out in the oven). Pour the lime mixture into the prebaked pie shell and bake for another 30 minutes. Note! Lower the heat to 160°C/320°F when about 10 minutes cooking time remains.
